Now let's get to work. Follow these steps in order, and you'll have a frothy cup in under two minutes.
- Sift the matcha (optional but recommended). Put your 1.5 grams of powder through a fine mesh into the bowl. This prevents clumps.
- Add a little hot water. Pour in about 60 ml of your 80°C water. Just enough to cover the powder.
- Whisk in a zigzag motion. Hold the chasen like a pencil and move it in a quick W pattern, not circles, for about 15 seconds. You'll see froth form.
- Top up with more water or milk. Add another 150 ml of hot water (or your preferred milk) and stir gently.
- Taste and adjust. If it's too strong, add a splash of hot water. Too weak? Next time add a gram more.
That's the whole procedure. It's simple once you get the rhythm back.
