Sour siphon coffee in hot weather usually means your brew is under-extracted. The heat makes your water hotter and your beans grind differently, so you need to adjust. Fix it by using a slightly finer grind, shortening your brew time, and increasing your coffee-to-water ratio. Also, make sure your water isn't boiling too aggressively and that your beans are fresh—they lose flavor faster in heat.
