
Try this first (60 seconds)
Check your grind size. If your espresso runs slower than 30 seconds or drips like molasses, your grind is too fine. Grind coarser—just a notch or two—and pull another shot. That's the fastest fix for bitterness.
Also, look at your shot time. If it's running 40 seconds or more, you're over-extracting. Adjust accordingly.
If that didn't work
Next, adjust your coffee dose. If you're using more than 18 grams, cut back. A standard double shot is 14–18 grams. Too much coffee means more surface area for over-extraction. Try 16 grams and see if the bitterness softens.
Also, check your water temperature. If your machine runs hot (over 205°F), the water can scorch the coffee. Let the group head cool slightly before pulling, or use a thermometer to verify.
If it's still failing
Sometimes it's the beans. If your coffee is roasted too dark or sits in the bag for weeks, bitterness is inevitable. Switch to a medium roast with a recent roast date. Also, clean your equipment—old coffee oils can add a rancid, bitter taste. Backflush your machine and wipe the group head.
When to replace—not repair
If you've tried grind, dose, time, temperature, and beans, and it's still bitter, consider your water quality. Hard water can alter extraction. Use filtered water. If your machine's pressure is off—too high—you might need a service. But if the problem persists across different beans and settings, it may be time for a new grinder or machine.
How to avoid it next time
Keep a log of your brew parameters. Write down grind setting, dose, yield, and time for each shot. When you hit a sweet spot, replicate it. Also, buy fresh beans in small batches and use them within two weeks of roasting. And don't forget to descale regularly.
Bitter espresso is fixable—most of the time it's just a matter of tweaking one or two variables. Start with the grind, then move down the list. You'll be back to smooth, balanced shots in no time.
